Papua New Guinea Arokara is a cooperative of growing plantations from Tairora and Gadsup. The farmers have been producing high quality coffees for nearly 20 years. Farmers pick the fruit and then the coffee is pulped on the same day. The coffee is fermented for 36 hours in cement vats. After the fermentation process the coffee is washed with mountain stream water from the nearby Aru River. The drying process can take anywhere from 7 to 12 days. When the coffee is finished being milled it has a bluish color.
This coffee is also used in Lupara Espresso to add body and crema.
